El Diviso is a great example of commitment to quality and sustainability. El Diviso brings together the farms of two families, El Diviso (Nestor and Adrian Lasso) and Las Flores (Jhoan Vergara), near the town of Pitalito in the Huila region of Colombia. This partnership was great thanks to these 3 young people who combined their knowledge to improve the quality of the coffee obtained.
 
Fermentation and Flavor Profile.
The cherries are placed in airtight, anaerobe tanks, where they are left to ferment for 180 hours (or about 7.5 days). This is a complex, slow, and controlled process where the natural enzymes in the coffee beans gradually break down the sugars and other chemicals in the pulp. Discover this Pink Bourbon with a medium body, distinct notes of strawberries, and subtle vanilla on the finish.
